De hecho, en varias zonas de Espa\u00f1a es un plato t\u00edpico en Navidad.\r\nEn esta lecci\u00f3n te proponemos elaborar una sopa de pescado y marisco especiada, muy sencilla de hacer pero no por ello menos sabrosa. \r\n","preparacion":"Preparamos un sofrito con ajo, cebolla y tomate. Al final de su cocci\u00f3n agregamos piment\u00f3n y azafr\u00e1n.\r\nMientras, limpiamos las chirlas y las gambas.\r\nEn una olla sofre\u00edmos un poco de aceite y dos dientes de ajos picados. A\u00f1adimos las chirlas y las gambas y rehogamos, a\u00f1adiendo el sofrito de la otra olla.\r\nAdicionamos un chorro generoso de vino blanco dejando que reduzca a fuego medio. Posteriormente agregamos el agua y dejamos que se haga a fuego lento durante 30 minutos. Cuando haya pasado este tiempo, colamos la mezcla y reservamos el caldo del marisco.\r\nPor otro lado, escaldamos en agua con bicarbonato las hojas de espinaca durante 1 minuto y las licuamos, aprovechando su caldo para mezclarlo con el caldo de marisco. Batimos ambos caldos hasta que tenga el color verde deseado, y reservamos.\r\nHervimos en agua con sal los ajetes durante 90 segundos, sacamos y blanqueamos en agua helada. \r\nEn una bandeja de horno colocamos troceados los langostinos, la dorada y la sepia; y agregamos los ajetes. Horneamos 2 minutos a 160\u00ba C.\r\nMientras, abrimos los mejillones en una sart\u00e9n con un poco de caldo de marisco.\r\nMezclamos mayonesa con salsa de kimchi, y preparamos la salsa de chile dulce picante.\r\nEmplatamos al gusto.
