La bresa de la marinada mezcla verduras al gusto, hierbas arom\u00e1ticas o especias, y vino tinto para cubrir la carne, previamente troceada. Colamos y reservamos el vino tinto y la bresa.\r\nUna vez marinada la carne la sacamos del bol y la escurrimos antes de dorarla en sart\u00e9n con un poco de aceite. Retiramos y rehogamos la bresa en la misma sart\u00e9n hasta que dore. Reincorporamos la carne y rehogamos con el vino tinto de la marinada, dejando que reduzca a fuego medio, durante unos 90 minutos.\r\n\r\nUna vez marinada la carne la sacamos del bol y la escurrimos antes de dorarla en sart\u00e9n con un poco de aceite. Retiramos y rehogamos la bresa en la misma sart\u00e9n hasta que dore. Reincorporamos la carne y rehogamos con el vino tinto de la marinada, dejando que reduzca a fuego medio, durante unos 90 minutos.\r\n\r\nRetiramos la carne y reservamos en otra sart\u00e9n a fuego muy bajo.\r\n\r\nPor otra parte, ligamos en un bol vino tinto con almid\u00f3n de ma\u00edz y lo a\u00f1adimos a la bresa y el vino de la sart\u00e9n, removemos, dejamos que espese y colamos la salsa para agregarla a la sart\u00e9n donde est\u00e1 la carne.
