Para esta elaboraci\u00f3n acompa\u00f1aremos con vegetales y casta\u00f1as y con otra carne de caza, ya que vamos a usar un solomillo de ciervo\r\nmarinado y secado.","preparacion":"Marinamos la carne de jabal\u00ed en aceite con pimienta en grano y unas ramas de romero.\r\nPor otra parte, tenemos el lomo de ciervo (previamente secado), con forma de rulo envasado en papel film. Lo cortamos y lo a\u00f1adimos al marinado del jabal\u00ed.\r\nA continuaci\u00f3n, doramos en sart\u00e9n los dos tipos de carne. Una vez est\u00e9n hechos, retiramos la carne, cortamos y emplatamos al gusto, acompa\u00f1ando de la guarnici\u00f3n.\r\nEl jugo de la sart\u00e9n lo desglasamos con vino, dejando que reduzca con mantequilla, dando lugar a una salsa con la que regamos el\r\nplato.\r\n\r\nPara hacer la guarnici\u00f3n:\r\nCortamos en juliana fina la cebolleta y la doramos en sart\u00e9n, a\u00f1adimos los boletus y las casta\u00f1as peladas.
