Es muy com\u00fan encontrar este tipo de conservas en cualquier supermercado, pero en esta lecci\u00f3n te vamos a ense\u00f1ar c\u00f3mo hacer un escabeche en casa.\r\n\u00bfQu\u00e9 lograremos con este escabeche? Varias cosas: daremos sabor y aroma, ablandaremos  la carne del pescado, y tendremos un conservante casero para este tipo de pescados.\r\nMientras te explicamos esta t\u00e9cnica, estaremos siempre atentos a los puntos de cocci\u00f3n exactos que deben tener los pescados azules como la caballa.\r\nE igualmente, te detallaremos, paso a paso, cu\u00e1l es el m\u00e9todo para limpiar esta clase de pescado.\r\n","preparacion":"Para hacer el escabeche:\r\nColocamos abundante aceite en un cazo y calentamos. Pochamos las cebolletas cortadas en julianas. Una vez est\u00e9n pochadas, agregamos las zanahorias cortadas en julianas, dos dientes de ajo, laurel y pimienta en grano, dejando que contin\u00fae su cocci\u00f3n. Posteriormente a\u00f1adimos vinagre, agua y unos trozos de jengibre, y dejamos reducir.\r\nRetiramos el escabeche del fuego, y con \u00e9l cubrimos las caballas (limpias) en un recipiente que tapamos inmediatamente, dejando que repose durante unos 20 o 30 minutos.\r\nEmplatamos al gusto: con pan tostado y germinados de cebollas o de borraja, por ejemplo.\r\n","ingredientes":"Para 4 personas:\r\n600 gr. de caballa (limpias)\r\n2 Cebolletas\r\n3 Zanahorias\r\n2 dientes de ajos\r\n1 dl.
