Y para ello hemos elegido uno de los pescados azules m\u00e1s utilizados en cocina: el at\u00fan.\r\nEn esta lecci\u00f3n te ense\u00f1aremos las claves para que hagas el entrecot de at\u00fan en su punto. Estaremos atentos al tiempo de cocci\u00f3n, ya que este tipo de pescados tan grasos, si se hacen en exceso corren el riesgo de quedarse secos.\r\n\r\nEsta t\u00e9cnica con la que trabajaremos el at\u00fan es de clara influencia asi\u00e1tica. Por eso, para acompa\u00f1ar nuestro entrecot de pescado hemos elegido una salsa con ingredientes que vienen de la cocina oriental, como la salsa de soja, el jengibre fresco, el aceite de s\u00e9samo, o el pak choi.","preparacion":"Para el at\u00fan:\r\nEn una sart\u00e9n con aceite marcamos el at\u00fan d\u00e1ndole a cada uno de sus lados el mismo tiempo de cocci\u00f3n. Una vez doradas las superficies, lo retiramos, dej\u00e1ndolo atemperar, antes de cortarlo para emplatar. Podemos salpimentar una vez cortado.\r\n\r\n\r\nPara hacer la salsa:\r\n\r\nCortamos el ajo y lo calentamos con aceite en la olla \u201csaut\u00e9\u201d a baja temperatura. Le a\u00f1adimos jengibre (laminado muy fino) y una cayena. Posteriormente agregamos la salsa de soja, el vinagre y el aceite de s\u00e9samo. Dejamos reducir y colamos.\r\n\r\n\r\nPara la guarnici\u00f3n:\r\n\r\nCocemos las zanahorias, las chiriv\u00edas y el pak choi.
