Poco a poco vamos a\u00f1adiendo la maltoestrina (en tres veces).\r\n\r\nPara el cremoso:\r\n\r\nMientras se mezcla el merengue en el robot vamos preparando la gelatina introduci\u00e9ndola en un bol con hielo. En una olla incorporamos la leche de cabra y el queso que removeremos de forma constante a fuego medio hasta que coja cremosidad.\r\nIntroducir el cremoso en la trituradora junto con las hojas de gelatina escurridas. Una vez mezclado en la trituradora introducimos en la manga pastelera y enfriamos en nevera durante 30 o 40 minutos.\r\n\r\nPara los merengues:\r\n\r\nPrecalentamos el horno a 70\u00ba en funci\u00f3n de deshidrataci\u00f3n. Preparamos una bandeja con papel de horno o silicona antihaderente e introducimos el merengue en una manga pastelera. Preparamos los merengues peque\u00f1os (de tama\u00f1o un bocado) para introducir en el horno entre 2 o 3 horas, dependiendo del horno, a una temperatura de 70 o 75\u00ba.\r\n\r\nPara el emplatado:\r\n\r\nA\u00f1adimos en el plato 5 bases de queso donde apoyar\u00e1n los merengues para que no se muevan. Seguidamente situaremos el merengue encima y volveremos a incorporar cremoso sobre cada merengue. En la parte superior incorporaremos entre 4 y 5 pi\u00f1ones y decoraremos con flores y un chorrito de miel.","ingredientes":"Para el merengue\r\n500 gr de az\u00facar glace\r\n250 gr de zumo de lim\u00f3n \r\n35 gr de alb\u00famina\r\nc\/s de Sal y pimienta negra molida\r\n50 gr de malto \r\n-Montar, escudillar y deshidratar en horno a unos \u201cx grados\u201d.\r\nPara el cremoso\r\n500 gr de queso de cabra\r\n150 gr leche de cabra \r\n2 hojas de gelatina hidratadas \r\n-Mezclar queso y leche subir a 70 grados. A\u00f1adir las colas y dejar reposar.
