Cuando empiece a caramelizarse agregar el pollo, regar con un vasito de agua, la miel y cocer tapada. Cuando el pollo est\u00e9 cocido. Retirarlo. \r\nDejar confitar la cebolla hasta que desaparezca completamente el l\u00edquido.\r\nMientras tanto, deshilachar la carne de pollo, volver a meter en la cebolla confitada. Agregar los huevos batidos. Cuajar el huevo sobre la pastela, pero teniendo en cuenta que no quede l\u00edquido para que no empape la pastela.\r\nA las almendras aromatizarlas con agua de azahar y secarlas en el horno a 90\u00baC que incorporamos a la pastela.\r\nMontaje:\r\nEn moldes individuales, colocar una hoja de pasta brick, pintar con mantequilla derretida, colocar otra hoja encima, rellenar con la mezcla de pollo, colocar almendras molida aromatizadas y espolvorear con pel\u00edn de canela (optativo az\u00facar glas), cubrir con otra hoja brick, cerrar y pintar con mantequilla derretida.\r\nLlevar a horno precalentado a 180\u00ba durante 10-15 minutos o hasta que est\u00e9 dorada o crujiente.\r\nRetirar, desmoldar y espolvorear con az\u00facar glas, canela y unas hojas de hierbabuena.\r\nAcompa\u00f1amiento:\r\nPur\u00e9 de Limones encurtidos:\r\nColocar en una cazuela los limones encurtidos troceados y la mitad de su peso en az\u00facar. Cocer hasta que se haga una mermelada ligera. Triturar. Pasar por chino y reservar.\r\nPur\u00e9 de tomate y aceitunas:\r\nProceder como un chutney: En una cazuela, poner todos los ingredientes y cocerlos a fuego moderado. Triturar, pasar por chino. Reservar.\r\nEmplatado:\r\nColocar una pastilla.
