Pelar. Colocar en bandeja. A\u00f1adir aceite 0,4 hasta la mitad del tomate, tomillo y romero. Cocer al horno a 160\u00ba durante unos 35-40 minutos seg\u00fan tama\u00f1o. Enfriar y escurrir el aceite.\r\nRellenar la flor con el tomate y reservar.\r\n\r\nPara el mandala:\r\n\r\nCortar los calabacines en monedas regulares de un grosor m\u00e1x de 1,5mm.\r\nSobre un trozo del papel sulfurizado, disponer el mandala. A\u00f1adir las hojas de las hierbas (albahaca, brote hinojo, estrag\u00f3n, perifollo) y reservar.\r\n\r\nPara las aceitunas dulces:\r\n\r\nPreparar con el az\u00facar y 200gr de agua un jarabe, a\u00f1adir las aceitunas calamata y cocer. Triturar en un Thermomix o T\u00farmix hasta conseguir una textura muy fina. Colocar en un biber\u00f3n y reservar.\r\n\r\nPara el montaje:\r\n\r\nMarcar el mandala en una sart\u00e9n, calentar la flor al horno. En un plato, colocar el mandala, la flor en el centro, un poco de aceite de la cocci\u00f3n de los tomates y disponer unos puntos de pur\u00e9 de calamata.
