Es una t\u00e9cnica cl\u00e1sica de muchos pa\u00edses americanos ribere\u00f1o del oc\u00e9ano Pac\u00edfico.\r\nEn esta lecci\u00f3n te vamos a ense\u00f1ar a preparar un ceviche de gamb\u00f3n, una tapa que podr\u00e1s preparar de forma f\u00e1cil y r\u00e1pida si aparecen invitados por casa.\r\nCon esta receta tendr\u00e1s la base para elaborar otros ceviches, utilizando la carne de diversos mariscos o pescados.\r\n","preparacion":"Limpiamos los gambones quit\u00e1ndoles la cabeza y pel\u00e1ndolos con las manos y vigilando que no nos quede ning\u00fan resto de piel pegada a la carne. Abrimos por la mitad cada gamb\u00f3n y retiramos las v\u00edsceras. Una vez limpios, cortamos los gambones obteniendo dos filetes de cada uno. \r\nPor otro lado, elaboramos la leche de tigre. Echamos en un bol el zumo de lima y a\u00f1adimos una pizca de aj\u00ed amarillo y de rocoto, con cuidado de no pasarse pues ambos chiles son muy picantes.\r\nEmplatamos los gambones y echamos la leche de tigre por encima, ba\u00f1ando bien los gambones. A\u00f1adimos una poco de cilantro fresco bien picado, un chorrito del aceite aromatizado con las cabezas del marisco, una pizca de sal, una pizca de pimienta negra, un poco de cebolla roja cortada en juliana, y unos brotes de cilantro.\r\nPara el aceite aromatizado\r\nCocemos las cabezas en el aceite de oliva virgen extra hasta obtener un aceite perfumado con el aroma del gamb\u00f3n.
