Con las cabezas, las ponemos en aceite a fuego medio entre 5 y 8 minutos. Luego dejamos reposar para que atempere.\r\nPor otro lado, picamos los langostinos (previamente congelados) en tama\u00f1o para tartar y los colocamos en un bol  y vamos a\u00f1adiendo: sal y pimienta, especias (al gusto), cebolla morada picada, el zumo de una lima, una pizca de aceite, una cucharadas de salsa de soja, una pizca de salsa Worcestershire, una pizca de salsa picante, dos cucharaditas de mostaza y cilantro fresco picado. Dejamos reposar tapado con papel film\r\nPara hacer el guacamole:\r\nPelamos y deshuesamos el guacamole, lo colocamos en un bol y aplastamos con un tenedeor. Le a\u00f1adimos la cebolla morada picada, los dados de tomate, el cilantro picado, el jugo de una lima, sal, pimienta, un ajo picado y aceite de oliva.
