Lo introducimos en el horno a 130\u00ba y dejamos que el pan rallado se tueste.\r\nCortamos los esp\u00e1rragos por la mitad, usando solo la parte m\u00e1s tierna. Hacemos un atadillo con la loncha de bacon rodeando los esp\u00e1rragos y la fijamos con una brocheta de bamb\u00fa. Fre\u00edmos el ramillete en aceite de oliva virgen extra muy caliente, dejando que se dore el bacon y los esp\u00e1rragos queden crujientes. Una vez dorado, retirar y poner en un plato con un papel secante para absorber el exceso de grasa.\r\n\r\nParalelamente, cascamos un huevo y separamos la clara de la yema. Pasamos la clara por la plancha y, cuando est\u00e9 bien cuajada pero sin que coja color, la disponemos en el plato. Colocamos sobre la clara el ramillete de esp\u00e1rragos y quitamos la brocheta de bamb\u00fa.\r\n\r\nRetiramos el pan rallado con la trufa del horno y mezclamos bien. Colocamos una porci\u00f3n de esta mezcla en un lado del plato, y ponemos la yema de huevo justo encima de la arena de trufa.
