En la \u00e9poca navide\u00f1a, si cabe, todav\u00eda m\u00e1s. \r\nEn esta lecci\u00f3n te ense\u00f1amos a elaborar un postre muy recomendable para Navidad: un parfaitde turr\u00f3n de Jijona, un dulce que, en esta ocasi\u00f3n, usa un producto tan navide\u00f1o como el turr\u00f3n. El parfait, dulce cl\u00e1sico de la gastronom\u00eda gala, es un postre helado que admite distintos sabores y adici\u00f3n de todo tipo de licores.","preparacion":"Batimos las yemas con 70 gramos de az\u00facar hasta que queden con una consistencia cremosa.\r\nParalelamente, sumergimos la gelatina en agua helada y picamos bien el turr\u00f3n. Reservamos.\r\nCalentamos la leche, agregamos la mitad de leche a las yemas; diluimos bien y pasamos a un cazo. \r\nEchamos el resto de la leche sobre las yemas y calentamos hasta que se espese, sin dejar de remover para evitar que se nos corte. Cuando est\u00e9 listo, colamos y vertemos en un bol. A\u00f1adimos el turr\u00f3n troceado, reservando un trozo para decoraci\u00f3n, y trabajamos la mezcla hasta que se disuelva completamente.Para que nos quede con una textura uniforme, usamos un t\u00farmix.Incorporamos la gelatina remojada y bien escurrida y volvemos a mezclar todo muy bien ayud\u00e1ndonos del t\u00farmix. Dejamos enfriar y reservamos.\r\nMontamos las claras a punto de nieve a\u00f1adiendo una pizca de sal y hacemos unachantilly con la nata l\u00edquida y el az\u00facar restante. Incorporamos la nata a la crema de turr\u00f3n con movimientos suaves de abajo-arriba. Despu\u00e9s, a\u00f1adimos de igual forma las claras a punto de nieve. Vertemos la mezcla en cuatro  moldes individuales y congelamos durante cuatro horas.
