Para las alb\u00f3ndigas:\r\n\r\nHacemos las alb\u00f3ndigas pas\u00e1ndolas por harina. Las fre\u00edmos en aceite que no est\u00e9 demasiado caliente. Las vamos dorando (s\u00f3lo dorando) y apartando en una cacerola.\r\nEn ese aceite sobrante de las alb\u00f3ndigas, echamos una cebolla picada. Cuando est\u00e9 dorada, a\u00f1adimos una cucharada de harina. Cuando est\u00e9 tostada la harina, a\u00f1adimos el vino blanco y un vaso de agua.\r\nSe arregla de sal. Esta mezcla la vertimos encima de las alb\u00f3ndigas.\r\nSe baja el fuego y se dejan 30 minutos cociendo.\r\nVamos pelando las patatas y parti\u00e9ndolas en daditos peque\u00f1os. Las fre\u00edmos con el aceite fr\u00edo hasta que se doran\r\nDespu\u00e9s ponemos s\u00f3lo las alb\u00f3ndigas en una fuente.\r\nEl resto de la salsa, se pasa por el chino, si es necesario se agrega agua.\r\nSe le a\u00f1ade la yema de huevo que ten\u00edamos reservado y a esta mezcla se le a\u00f1aden las alb\u00f3ndigas.
