Despu\u00e9s hacer una mayonesa con el huevo y el aceite e incorporar los interiores.\r\n\r\nPara el montaje:\r\n\r\nPoner la espina en una pizarra a modo de plato y disponer encima los dados de cabracho, rallar un poco de m\u00fajol y unos puntos de mahonesa.
