La troceamos para yudar al pasapur\u00e9. Nos ponemos guantes y empezamos a amasar suavemente la patata hasta que quede una mezcla homog\u00e9nea y lisa. Hacemos bolitas de 30 gr y reservamos.\r\n\r\nPasta Aj\u00ed:\r\n\r\nPara hacer la pasta de aj\u00ed limpiaremos el aj\u00ed cort\u00e1ndolo, quit\u00e1ndole semillas y venas. Seguidamente se hervir\u00e1n y luego lo colaremos y lo trituraremos.\r\n\r\nVelo de aceituna:\r\n\r\nPelar las patatas y romperlas con un cuchillo. Llevar las patatas al vaso de la termomix con el agua y programar.\r\n25 minutos 100\u00ba a velocidad 6. Cuando falte un minuto agregar la pasta de aceitunas, triturar y estirar en una bandeja de horno.\r\nSecar en un horno a 100\u00ba durante 10 minutos. Abrir el horno y pulverizar con agua. Volver a dar tiempo 15 o 20 minutos m\u00e1s.\r\n\r\nPolvo de aceituna:\r\n\r\nSecar las aceitunas en un horno a 90 grados durante 2 horas. Triturar y reservar.\r\n\r\nSalsa de olivas:\r\n\r\nDeshuesar las aceitunas. A\u00f1adir mayonesa y Mezclar todos los ingredientes en una vaso de turmix y triturar hasta lograr una crema fina.
