Frijoles refritos","url":"https:\/\/vimeo.com\/746241865","descripcion":"","preparacion":"Para los sopes:\r\nHacer bolas de masa de ma\u00edz de 30gr aprox.\r\nCon la ayuda de una prensa de tortillas prensar la masa sin apretar\r\ndemasiado, para que quede de 1\u20442cm de grosor aproximadamente.\r\nEn un comal o plancha caliente colocar la \u201ctortilla\u201d gruesa. Dejar unos\r\nsegundos hasta que dore y voltear.\r\nCon los dedos \u00edndice y pulgar \u201cpellizcar\u201d los bordes, llevando la masa del\r\ncentro hacia afuera y formando un reborde de unos 3 a 4 mil\u00edmetros.\r\nReservar.\r\n\r\nPara el pollo enchipotlado:\r\nCocer el pollo en un caldo base.\r\nRetirar la piel, los huesos y desmigar.\r\nCortar la cebolla en juliana, el tomate en gajos y filetear el ajo.\r\nEn una olla grande, calentar el aceite y dorar seg\u00fan el siguiente orden:\r\nPrimero el ajo, luego la cebolla y por \u00faltimo el tomate. Dejar cocinar por 15\r\nminutos.\r\nCuando est\u00e9 bien pochado, agregar el pollo, las especias y el chile chipotle\r\ntriturado.\r\n\r\nDejar cocinando a fuego m\u00ednimo durante 20 minutos.
