Limpiamos el Alga Kombu con un trapo mojado quitando el polvo blanco que la cubre y que sirve para mantenerla seca.\r\n2. Ponemos el agua fr\u00eda y el alga kombu en un cazo y lo ponemos a calentar a fuego medio-bajo no debe hervir en exceso.\r\n3. Sacamos el alga kombu y la reservamos para pr\u00f3ximas recetas.\r\n4. Ponemos el bonito seco (katsuobushi) en el cazo y apagamos el fuego justo cuando el agua va a empezar a hervir.\r\n5. Dejamos reposar el katsuobushi y cuando empieza a hundirse en el cazo, lo filtramos con un pa\u00f1o y un colador. Estame\u00f1a de tela.\r\nTARTAR:\r\n1. Ponemos un bol con un ba\u00f1o maria inverso, para que tengamos todos los pro-ductos frescos en todo momento, a\u00f1adimos las cigalas cortadas en dados pe-que\u00f1os, la charola en brunoise, el cebollino bien picado, la manzana en dados y las aceitunas bien picadas.\r\n2. Cuando tenemos todos los sonidos en el bol a\u00f1adimos las salsas(kimchi y mostaza)\r\n3. Para terminar a\u00f1adimos el aceite y el zumo de lima lo movemos en\u00e9rgicamente para que no queden l\u00edquidos sueltos este bien emulsionados.\r\n4. Lo ponemos apunto de sal y pimienta.\r\n5.
