Meter en un sif\u00f3n de 0,5 L\r\nCon ayuda de unos vasos de pl\u00e1stico, previamente cortados en la base, poner la mezcla del sif\u00f3n hasta \u00be partes. Cocinar en el microondas a 800w durante 45 segundos. Guardar en la nevera boca abajo y cuando est\u00e9n fr\u00edos, sacar con ayuda de una puntilla y reservar.\r\n\r\nPara la crema de toffe:\r\n\r\nPoner en un cazo la leche, la nata, el az\u00facar y la glucosa y calentar hasta que todo est\u00e9 homogenizado. Incorporar el toffe, mover y despu\u00e9s poner al Iota y subir hasta que hierva. Varillas y reposar en recipiente de cristal en nevera hasta que endurezca.\r\n\r\nPara la roca de Yuzu:\r\n\r\nEn un cazo poner la nata a hervir e incorporar los chocolates. Homogenizar y a\u00f1adir la glucosa, el zumo de yuzu y la mantequilla. Con ayuda de una varilla mezclar y reposar en un recipiente de cristal en nevera hasta que endurezca. Una vez endurecido, daremos forma y pasaremos por el cacao en polvo. Reservar.\r\n\r\nPara la piedra de aceite de oliva virgen:\r\n\r\nEn un bol amplio poner la maltodextrina e incorporar poco a poco el aceite de oliva. Mezclar con ayuda de una varilla hasta formar rocas y guardar en el congelador hasta que endurezca. Reservar.\r\n\r\nPara el gel de sake:\r\n\r\nMezclar los ingredientes en nuestro vaso triturador y reservar en manga para ayudarnos en el emplatado.\r\n\r\nMontaje final del plato:\r\n\r\nPonemos la crema de toffe en la base de nuestro plato.
