Cocemos lombarda durante 15 minutos una vez haya roto a hervir el agua. Retiramos.Cortamos la lombarda y las chalotas en finas l\u00e1minas . En una sart\u00e9n ponemos un poco de mantequilla y unas gotas de AOVE y salteamos la chalota. A continuaci\u00f3n a\u00f1adimos en la sart\u00e9n la lombarda y una vez salteadas,a\u00f1adimos las pasas bien escurridas. Dejamos a fuego medio durante 15 minutos. Retiramos y reservamos. Ser\u00e1 nuestra guarnici\u00f3n.\r\n\r\nPaso 2 :\r\n\r\nCortamos cuidadosamente los nervios del magret y le haremos a cuchillo dos hendiduras por la parte de la carne ( no por la piel ) para evitar que se abombe luego en la sart\u00e9n.\r\nPor la parte de la piel, cincelaremos \u00e9sta en cuadritos muy peque\u00f1os con la ayuda de un cuchillo para prepararla.\r\nEn una sart\u00e9n cubrimos fondo con mantequilla y aceite y doramos el magret por la parte de la piel hasta que \u00e9sta quede dorada y crujiente. A continuaci\u00f3n damos la vuelta al magret y doramos la carne.
