{"id":2651,"date":"2022-09-13T11:27:05","date_gmt":"2022-09-13T11:27:05","guid":{"rendered":"https:\/\/www.escuelamasterchef.com\/?post_type=videos&#038;p=2651"},"modified":"2023-02-07T12:33:31","modified_gmt":"2023-02-07T12:33:31","slug":"zamburinas-a-la-plancha-con-ratatouille-de-verduras-y-jamon-iberico","status":"publish","type":"videos","link":"https:\/\/www.escuelamasterchef.com\/en\/videos\/zamburinas-a-la-plancha-con-ratatouille-de-verduras-y-jamon-iberico\/","title":{"rendered":"Zamburi\u00f1as a la plancha con ratatouille de verduras y jam\u00f3n ib\u00e9rico"},"content":{"rendered":"","protected":false},"excerpt":{"rendered":"","protected":false},"author":8,"featured_media":0,"comment_status":"open","ping_status":"closed","template":"","meta":{"_acf_changed":false,"footnotes":""},"categories":[],"class_list":["post-2651","videos","type-videos","status-publish","hentry"],"acf":{"titulo":"Zamburi\u00f1as a la plancha con ratatouille de verduras y jam\u00f3n ib\u00e9rico.","url":"https:\/\/vimeo.com\/748045767","descripcion":"En esta lecci\u00f3n nos centramos en la zamburi\u00f1a, un molusco bivalvo muy apreciado en la gastronom\u00eda espa\u00f1ola, sobre todo en Galicia, ya que forma parte de la popular empanada gallega.\r\nAll\u00ed se captura principalmente este marisco, de tama\u00f1o inferior a la vieira, que posee una carne con un sabor muy concentrado y una textura de gran calidad.\r\nPara aprovechar estas cualidades te vamos a ense\u00f1ar la t\u00e9cnica para que hagas unas zamburi\u00f1as a la plancha bien jugosas, prestando especial atenci\u00f3n a los l\u00edquidos que tenemos que eliminar de la zamburi\u00f1a antes de su cocci\u00f3n.\r\nPara ofrecerte una original alternativa, mezclaremos el sabor de la zamburi\u00f1a con el del tocino blanco, muy presente en la guarnici\u00f3n.\r\n","preparacion":"Para hacer las zamburi\u00f1as:\r\nAbrimos las zamburi\u00f1as, le quitamos las tripas y eliminamos el exceso de agua con papel absorbente.\r\nEn una sart\u00e9n con un poco de aceite caliente doramos las zamburi\u00f1as, durante unos 90 segundos aproximadamente por un lado, antes de girar y dejar que se hagan por el otro lado retirando la sart\u00e9n del fuego.\r\n\r\nPara hacer las verduras:\r\nHervimos durante unos 30 segundos la coliflor y el br\u00f3coli y los blanqueamos en agua helada. Hacemos el mismo procedimiento con la jud\u00eda verde cortada en julianas, pero con una cocci\u00f3n de 90 segundos.\r\nPor otro lado, eliminamos la sal del tocino y lo cortamos en dados peque\u00f1os que fundiremos en la sart\u00e9n con aceite a fuego lento.
