Introducimos y sacamos el pulpo del agua varias veces (entre 3 y 7 veces), antes de dejarlo que hierva dentro del agua.\r\nUna vez tenemos el pulpo con una textura tierna, retiramos y cortamos en tacos que tostaremos en una sart\u00e9n con un poco de aceite.\r\n\r\nPara hacer el pur\u00e9 y las chips de patata:\r\nPara el pur\u00e9: limpiamos y pelamos las patatas gallegas y las hervimos con agua, aceite y sal. Trituramos y colocamos este pur\u00e9 en un cazo al ba\u00f1o Mar\u00eda. Agregamos mantequilla y el aceite trufado y lo mezclamos.\r\nPara las patatas chips: limpiamos y pelamos las patatas moradas y las laminamos muy finas antes de fre\u00edr con abundante aceite.
