Contrariamente a lo que muchos creen, no es una variedad de ave espec\u00edfica sino una gallina joven que se ha criado con ciertos m\u00e9todos tradicionales, y procede siempre de producci\u00f3n extensiva. \r\nLa carne de la pularda es muy fina y delicada, y la grasa del animal se halla infiltrada, como en las mejores viandas, gracias a la alimentaci\u00f3n con productos de calidad que ha tenido durante su cr\u00eda. En esta receta te ense\u00f1amos a hacer de modo sencillo una suculenta pularda rellena de cebolla y almendras con ciertos aires marroqu\u00edes.\r\n","preparacion":"Metemos las pasas en el whisky o el ron para macerarlas e hidratarlas. \r\nPor otro lado, limpiamos bien la pularda por dentro y por fuera. Reservar. Cortamos la cebolla en juliana y la pochamos hasta dejarla transparente. A\u00f1adimos las pasas con el alcohol. Subimos el fuego y dejamos evaporar.\r\nMachacamos las hebras de azafr\u00e1n en el mortero y a\u00f1adimos a la sart\u00e9n con la cebolla y las pasas. Removemos e incorporamos las almendras en polvo, las laminadas y el cilantro picado. Ali\u00f1amos con sal y pimienta. Retirar y dejar enfriar.\r\nSalpimentamos la pularda por dentro y rellenamos con la mezcla que hemos elaborado previamente. Cosemos para que no se salga el relleno.\r\nCubrimos una placa de horno con papel de aluminio, salpimentamos por fuera la pularda y la untamos con aceite de oliva virgen extra. La introducimos en el horno precalentado a 180\u00ba. Asamos durante aproximadamente 1 hora y cuarto.\r\nCuando est\u00e9 cocinada la pularda, cortamos el hilo y lo retiramos.\r\nPara la guarnici\u00f3n:\r\nPelamos las manzanas y las cortamos en gajos.
