La papada que vamos a trabajar en esta receta tiene tocino y es una de las grasas de mayor calidad de este animal.\r\nTe vamos a ense\u00f1ar una cocci\u00f3n prolongada a baja temperatura, ideal para este tipo de carnes.\r\nCon esta t\u00e9cnica lograremos que la grasa alcance una textura similar a la del flan. E igualmente, que la carne de la papada est\u00e9 tan melosa que podamos cortarla con un tenedor, sin necesidad de usar un cuchillo.\r\n","preparacion":"Metemos en una olla agua para que hierva a fuego lento y salamos la papada antes de introducirla en el agua. Hacemos una bresa con puerro, cebolla y zanahoria y la incorporamos a la olla junto a laurel y varios granos de pimienta.\r\nTapamos la olla, y dejamos que cueza a fuego lento durante un intervalo de 90 a 150 minutos, hasta que alcance la textura deseada.\r\nSacamos la carne y reservamos el caldo de la cocci\u00f3n.\r\nUna posibilidad que tenemos llegados a este punto es: atemperamos la carne y la cortamos d\u00e1ndole una forma rectangular o cuadrada. En una olla calentamos el caldo sobrante de la cocci\u00f3n anterior, e introducimos estos tacos de papada. Emplatamos al gusto.\r\nOtra posibilidad es, una vez acabada la primera cocci\u00f3n (larga) de la papada, y tras dejar atemperar, cortamos en dados y salteamos la papada en un poco de aceite.
