Cuando se haya integrado le a\u00f1adimos la levadura y,posteriormente, el agua tibia entre 20\u00ba y 24\u00ba. Amasamos hasta que quede una masa homog\u00e9nea y el\u00e1stica, pero que no sea pegajosa.\r\nSacamos y trabajamos sobre la tabla de amasado enharinada, bole\u00e1ndola hasta hacer una bola perfecta que cortaremos en forma de cruz. Dejamos reposar tapada con un trapo limpio durante unos 10-15 minutos en una zona c\u00e1lida (35\u00ba a 40\u00ba), a ser posible con algo de humedad cerca.\r\nPosteriormente, trabajamos de nuevo la masad\u00e1ndole unos ligeros golpes para que saque el aire que tiene dentro.Cortamos la masa en porciones de unos 45 gramos para hacer bollos individuales.
