Elaborado en una buena olla honda y con un sustancioso caldo marinero, este guiso es quiz\u00e1 uno de los arroces menos complejos de llevar a cabo en cocina. \r\nEn esta lecci\u00f3n te ense\u00f1amos las claves para que quede en su punto y con un potente sabor. \r\n","preparacion":"Para el caldo marinero\r\nEn una olla con aceite doramos las galeras y los cangrejos por tandas para que no cueza y reservamos. En esa misma olla doramos la verdura, sofre\u00edmos los ajos y a\u00f1adimos la pasta de tomate concentrado. Cuando est\u00e9 bien mezclado y dorado, a\u00f1adimos el agua fr\u00eda, el azafr\u00e1n y el laurel y llevamos a hervor. Mantenemos el hervor 25 minutos. Retiramos y dejamos infusionar unos 20 minutos. \r\n\r\nPara el arroz caldoso marinero\r\nMarcamos las cigalas y las gambas rojas y, antes de que se cuezan, reservamos. Cortamos la sepia y el calamar en brunoise y doramos en la misma cazuela a fuego vivo. \r\nPelamos las gambas arroceras. Hacemos un hueco en la olla y doramos las pieles y las cabezas de las gambas en el aceite. Las chafamos bien un par de minutos y retiramos. \r\nHacemos otra vez un hueco en la olla, esta vez en el centro, y hacemos el sofrito incorporando ajo, pimiento rojo, el piment\u00f3n dulce, el piment\u00f3n de hojilla (o \u00f1oras troceadas) y la crema de tomate\r\nRetiramos la olla un momento del fuego para incorporarle el arroz y rehogarlo. Volvemos a colocar la olla en el fuego, a\u00f1adimos el caldo caliente poco a poco y vamos moviendo alrededor de 14 minutos para que vaya soltando el almid\u00f3n. A\u00f1adimos una pizca de sal. \r\nCuando queden unos 3-4 minutos incorporamos las cigalas y las gambas reservadas y las almejas en crudo.
