Es originario de las zonas arroceras de Italia (noroeste del pa\u00eds), aunque se consume de igual modo en todo el estado y en gran parte del extranjero. Como su nombre indica, la base es el arroz (en italiano riso es arroz), y el queso Parmesano es un ingrediente fundamental.\r\nEn esta lecci\u00f3n te ense\u00f1amos a hacer uno de los risotto m\u00e1s conocidos y populares :  el risotto funghi porcini, o lo que es lo mismo, risotto con boletus.\r\n","preparacion":"Limpiamos los boletus y los cortamos en juliana antes de saltear con aceite y ajo en sart\u00e9n.\r\nEn una cazuela rehogamos la cebolla picada con aceite y le a\u00f1adimos el arroz, salpimentamos y removemos sin parar para que se empape de aceite. Agregamos el vino blanco hasta que evapore, momento en el que incluimos las cucharadas de fondo de ave poco a poco. Vamos removiendo evitando que se pegue y a\u00f1adiendo fondo de ave caliente cuando lo demande el grano de arroz, durante unos 12-14 minutos. Entonces a\u00f1adimos los boletus, y seguimos removiendo con fondo unos 2 minutos m\u00e1s.
