Por ejemplo, a partir de la nata fresca obtendremos mantequilla dulce, y a partir de nata madurada con acidificaci\u00f3n obtendremos una mantequilla \u00e1cida.\r\nLa mantequilla es un alimento de muy amplio consumo y multitud de usos culinarios. \r\n\r\nDesde las tradicionales tostadas de pan con mantequilla del desayuno, hasta su utilizaci\u00f3n en salsas. Adem\u00e1s, es uno de los ingredientes m\u00e1s utilizados en reposter\u00eda.\r\n","preparacion":"Para hacer ligaz\u00f3n con mantequilla:\r\nTenemos un l\u00edquido \u2013salsa o fondo- en el fuego, al que a\u00f1adimos la mantequilla y removemos dejando que reduzca y que la mantequilla act\u00fae como agente espesante de la mezcla.\r\n\r\nPara clarificar mantequilla:\r\nLa ponemos en un cazo a fuego muy bajo o en un ba\u00f1o Mar\u00eda y dejamos que se vaya derritiendo por acci\u00f3n del calor y vaya quedando lo m\u00e1s transparente posible.
