Sin embargo, es un guiso contundente lleno de productos de la tierra, que incluye la pera entre su lista de ingredientes.\r\nAqu\u00ed, encontrar\u00e1s las claves para que las legumbres y verduras de este guiso tengan su punto de cocci\u00f3n adecuado.\r\n","preparacion":"Ponemos a cocer en una olla con agua los garbanzos (que han estado previamente en remojo). Colocamos un clavo y dos ajos junto a los garbanzos y tapamos, dejando cocer a fuego lento unos 40 o 50 minutos.\r\nMientras, preparamos en una sart\u00e9n con aceite un sofrito b\u00e1sico. Primero doramos el ajo laminado, agregamos la cebolla en brunoise, y posteriormente el tomate, dejando que se haga todo a fuego lento unos 50 minutos.\r\nA\u00f1adimos a la olla la patata cacheada, la calabaza cortada en dados y la jud\u00eda verde previamente cortada. A\u00f1adimos agua al guiso si es necesario.
