El tiempo depende del grosor, pero aproximadamente unos 2 o 3 minutos. Sacamos y colocamos en papel.\r\n\r\nPara la merluza, podemos colocarla en papillote (papel de aluminio opcional o papel vegetal) junto a verduras de r\u00e1pida cocci\u00f3n (tirabeques o esp\u00e1rragos pelados, por ejemplo) y ali\u00f1amos antes de hornear en un horno precalentado a 200\u00ba, unos 10 o 15 minutos.\r\n\r\n\r\nCocci\u00f3n al vapor en rejilla (verduras):\r\n\r\nUna vez colocada la rejilla y el agua est\u00e9 hirviendo, las verduras se colocan siguiendo el orden seg\u00fan sus necesidades de tiempo de cocci\u00f3n. Se puede salpimentar y a\u00f1adir aceite al gusto. Tapamos y dejamos en cocci\u00f3n hasta que tenga la textura adecuada: tersa, firme, pero cocida.\r\n\r\n\r\nCocci\u00f3n al vapor con vaporera de bamb\u00fa (salm\u00f3n):\r\n\r\nLlevamos agua a ebullici\u00f3n (aromatizada con hojas de laurel). Pincelamos con aceite el lomo de salm\u00f3n y lo colocamos en la vaporera (previamente pincelada con aceite tambi\u00e9n). Dejamos una cocci\u00f3n de unos 4 o 5 minutos, y podemos poner un segundo piso de vapor.\r\n\r\n\r\nCocci\u00f3n al vapor con vaporera de bamb\u00fa (gyozas o dim sum):\r\n\r\nEn el segundo piso de la vaporera colocamos un lecho de hojas de acelgas, y encima las gyozas, tapamos y dejamos una cocci\u00f3n de 2 a 4 minutos.","ingredientes":"Pescados y vegetales, principalmente.
