Debemos conocer los distintos programas de presi\u00f3n y de envasado, que vienen determinados por el fabricante.\r\nPara hacer aceites aromatizados:\r\n\r\nEnvasamos al vac\u00edo el aceite con el aromatizante elegido, hierbas o especias, por ejemplo. Si deseamos aromatizar con ingredientes como la citronela, debemos cortar la citronela y envasarla al vac\u00edo antes de aplicarle una cocci\u00f3n de unos 70\u00ba durante unas 12 horas.\r\n\r\n\r\nPara hacer conservaci\u00f3n de elaborados al vac\u00edo:\r\n\r\nTenemos dos m\u00e9todos:\r\n\r\n-El primero de ellos consiste en retirar el producto una vez elaborado y atemperarlo hasta que enfr\u00ede, en ese momento envasamos al vac\u00edo y refrigeramos.\r\n\r\n-El segundo consiste en envasar al vac\u00edo la elaboraci\u00f3n -setas confitados en aceite, por ejemplo- y pasteurizarla posteriormente en agua caliente, entre 90\u00ba y 100\u00ba, durante 5-10 minutos.
